Firewatch is a gorgeous game made in Unity with some of the best voice work I've heard in a game.

A great GDC talk by Jane Ng about making a big open world game in Unity as a small team and the challenges associated with that.

Goes fairly in-depth about asset streaming, asset production, collaborating on the same project and scenes at the same time and other challenges related to making such a game in Unity or in general. Overall a great talk.
